Keto Creamy Spinach Artichoke Casserole

INGREDIENTS

  • 4 cups / 120 g fresh spinach
  • 3 Tbsp water
  • 4 oz / 114 g cream cheese
  • ¼ cup / 20 g yellow cheddar cheese, grated
  • 2 Tbsp mayonnaise
  • ¼ cup / 59 mL heavy cream
  • 1 Tbsp fresh garlic, chopped
  • ½ tsp ground white pepper
  • 1 8.5-oz / 240 g can artichoke hearts, hearts cut in halves
  • 1 cup / 83 g mozzarella, grated

DIRECTIONS:

Preheat oven to 350 degrees F / 177 degrees C.Heat a large saute pan for 4 minutes on medium heat. Add spinach and water. Cook until spinach is wilted. Remove from pan and cool. Squeeze out all water from spinach and roughly chop.Combine cream cheese, cheddar cheese, mayonnaise, heavy cream, garlic, white pepper and artichoke hearts. Stir thoroughly to combine all ingredients. Add chopped spinach to the mixture. Stir to combine.Spray an 8 X 8 inch glass baking dish with cooking oil and add artichoke mixture. Evenly distribute and top with mozzarella.Bake 25 minutes or until cheese is melted, crisp and slightly browned.
