Keto Turkey Spinach Meatballs
INGREDIENTS
- 4 cups / 120 g spinach
- 1 lb / 454 g 85% lean ground turkey
- 1 Tbsp dried basil
- 1 Tbsp dried oregano
- 1 tsp garlic salt
- ½ tsp black pepper
- 2 cloves fresh garlic, finely chopped
- 1 egg
- 1 Tbsp coconut flour
DIRECTIONS:
Preheat oven to 350 degrees F / 177 degrees C Into a large flat pan pour ½ cup of water and bring to a boil. Add spinach, cover with a tight-fitting lid. Let spinach cook for 2 minutes, remove lid and stir with a spoon, replace lid and cook until wilted -- 3 to 5 minutes. Reserve spinach and let it cool.
Combine the turkey, basil, oregano, garlic salt, pepper, and garlic. Add egg and coconut flour and mix until well blended. Using a bowl with a strainer squeeze the moisture out of the cooled spinach. Chop the spinach. Add the chopped dry spinach to the turkey mixture and blend it in.Spray a 9 X 13 inch glass baking dish. Portion the turkey into 6 equal portions, 1/3 cup each. Bake for 15 to 20 minutes, until the outsides are lightly browned.
