Broccoli Meal Prep Salad 

INGREDIENTS 
  • 2 cups broccoli florets
  • 1/2 cup diced tomato
  • 1 jalapeño, diced
  • 1/2 small red onion, minced
  • 1 scallion, chopped
  • 16 slices pepperoni, chopped or 8 slices cooked bacon, chopped
  • 1/3 cup Greek yogurt (or mayonnaise) + 1/3 cup water
  • 4 ounces cheddar cheese, shredded
  • Fresh cracked black pepper
DIRECTIONS

1. To make the broccoli pepperoni salad meal prep: In your meal prep containers, arrange broccoli, pepperoni (or bacon). Divide cheese into small cups, and diced red onion, tomatoes, jalapeño, and scallion in another set of cups.

2. In a glass, combine Greek yogurt, black pepper (or mayonnaise) and water, stir well until smooth. Divide into small plastic cups.
