Keto Lime and Coconut Yogurt Snacks

INGREDIENTS
  • 1 .44-oz / 12 g sugar-free lime gelatin packet
  • 1 cup / 237 mL hot water
  • ½ cup / 118 mL heavy cream 
  • ¼ cup / 31 g vanilla coconut collagen powder
  • 2 Tbsp non dairy coconut yogurt
DIRECTIONS:
In a medium bowl, place contents of lime gelatin packet and add hot water. Whisk to dissolve gelatin.

Portion lime gelatin mixture into 6 small glass jars and refrigerate for 30 minutes, until set.

In a bowl, whip heavy cream with a whisk until thick. Add collagen powder and whisk to incorporate. Add yogurt and stir to combine.

Top lime gelatin with whipped cream mixture and serve.
