Loaded Keto Cauliflower Soup
INGREDIENTS
- 1 tablespoon olive oil
- ¼ cup carrots, minced
- ¼ cup celery, minced
- 4 cups cauliflower florets
- 4 cups water
- 1 tablespoon Better than Bouillon chicken base
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
INSTRUCTIONS
Get out a soup pot and heat to medium high heat. Add the olive oil and then the chopped carrots and celery. Stir and turn the heat down to medium. Sauté for a few minutes to soften the vegetables.
Add in the rest of the ingredients to the pot (cauliflower, Better than Bouillon, water, salt, pepper, onion powder and garlic powder). Mix well and bring to simmer for about 10 minutes until the cauliflower is fork tender.
Turn off the heat and in batches ladle the cauliflower mixture and liquid into a high speed blender container. Blend on high until smooth and cream. Be careful when blending the hot liquid as it could burn you. Continue in batches until the all of the soup has been pureed. Pour back in the soup pan.
Serve the soup as is or top with cheddar shredded cheese, sour cream, chives, green onions, bacon bits or whatever you would put on a loaded baked potato. As is it's full of flavor and has less carbs and calories. Check recipe notes for toppings nutritional information.
