Keto Chocolate Covered Strawberries
Ingredients
- 12 strawberries
- A cup low carb chocolate chips (I used semi-sweet Lily's)
- 2 teaspoons coconut oil
Instructions
1. Wash strawberries and pat completely dry. Set aside
2. In a medium bowl, place the chocolate chips and coconut oil. Microwave for 30 seconds, stir and microwave an additional 10-15 seconds until melted and stir with fork.
3. Prepare a cutting board or sheet pan with a piece of parchment. Place a toothpick into each strawberry. You may also use a fork for this part, or simply hold the green tops. Dip each strawberry into the melted chocolate, about a of the way to the top. Hold over bowl until most excess chocolate is removed. Place onto the parchment. Repeat to use remaining strawberries.
4. Place into the fridge to harden for at least 30 minutes for best results. alternatively You may also place into the freezer for 15 minutes to quick set, then store in the refrigerator. To store, cover or place in air tight container for up to three days for best freshness.
