Keto Green Bean Casserole
INGREDIENTS
- 3 cups fresh green beans, sliced in smaller pieces (can also use frozen sliced green beans)
- 2 cups sliced mushrooms
- ¼ white onion, sliced
- 3–4 garlic cloves, minced
- ½ cup chicken bone broth
- 4 ounces cream cheese
- ½ cup shredded cheddar cheese
- Sea salt and black pepper to taste
- Crushed pork rinds
INSTRUCTIONS
Preheat the oven to 425 F.
In a large pot, boil the green beans until fork tender (about 10 minutes).
In a large saucepan, add the mushrooms, onion, garlic, and broth, bringing to a boil, and stirring frequently.
Reduce heat to a simmer and add in the cream cheese, stirring to combine.
Add the green beans in, mixing until combined.
Add the green bean mixture to an 8×8 baking dish, and top with shredded cheese, sea salt, black pepper, and optional crushed pork rinds.
