Pumpkin Spice Coffee Chia Seed Drink
INGREDIENTS
- Serves 2 - 2 t caffix, 2 cups water, 2 T cream, ½t cinnamon, ½t pumpkin pie, 1 dropper stevia, 2 T chia seeds
- 2 teaspoons Cafix coffee
- 2 cups water
- 2 tablespoons chia seeds
- ½ teaspoon cinnamon
- ½ teaspoon pumpkin pie spice
- 2 tablespoons heavy whipping cream
- 1 dropper of Sweet Leaf Vanilla Crème liquid stevia
INSTRUCTIONS
Note you can use 2 cups of regular or decaf coffee if you don't care about the Cafix coffee substitute. Also you can use your favorite sweetener if you don't have the liquid stevia. Use enough to make it as sweet as you like.
First you want to make your Cafix coffee substitute (or just use regular coffee). Mix 2 teaspoons of Cafix with 2 cups of water (or use 2 cups of regular coffee) in a large glass or even large pyrex measuring cup. If using hot water or coffee let it come to room temperature.
Mix 2 tablespoons of chia seeds with the coffee mixture and set in the refrigerator for about an hour or until the chia seeds swell and expand.
Take out the chia seed drink and mix in the cinnamon, pumpkin pie spice, stevia and heavy whipping cream. Mix well and pour into 2 mugs or cups.
Store leftovers in the refrigerator.
Optionally you can top with whipped cream if you wat.
