Keto Taco Casserole

INGREDIENTS
  • 2 lbs. ground beef  
  • 4 tbsp. homemade taco seasoning 
  • ½ cup chopped onion 
  • ½ cup chopped bell pepper 
  • 1 can Rotel tomatoes with green chilis 
  • 6 eggs 
  • ¼ cup heavy cream 
  • ⅓ cup sour cream 
  • 2 cups shredded cheddar cheese
INSTRUCTIONS
Preheat the oven to 350 degrees. Gather all your ingredients. 
In a large skillet or frying pan add the ground beef. Using a meat chopper mix up the ground beef.
Add in the taco seasoning, onions, and pepper. Cook on medium-high heat. 
Once the beef is basically cooked, add the can of Rotel tomatoes. (Be sure to drain the can first) 
In a large mixing bowl add the eggs, heavy cream, and sour cream. Whisk together. 
Transfer the ground beef mixture to a 9×13 casserole dish. 
Pour the egg mixture over the beef.
Top with shredded cheddar cheese. 
 Bake for 30 minutes. 
Let sit on the counter for about 5 minutes before cutting. 
Top with your favorite toppings and serve.
